Bread dough calculators
Two numbers decide most of a bake before the oven is on: how much dough you mix and how warm it is when mixing ends. These calculators work both out from the figures you already have.
Calculators in this section
-
Bread recipe scaling calculator
Enter your bread formula and how much dough you need, by flour weight, total dough weight or number of pieces. Every ingredient is scaled so the dough adds up exactly, loss margin included.
-
Desired dough temperature calculator
Enter the dough temperature you want and the temperatures of your flour, room and mixer. You get the water temperature that brings the dough there, in degrees Celsius or Fahrenheit.
Which calculator do I need?
Do you need a different amount of dough than the recipe makes, for example three 900 g loaves? Use the recipe scaling calculator.
Does your dough come off the mixer too warm or too cold? Use the dough temperature calculator; it also works out your mixer's friction factor from one trial mix.
